Wiesheu launches SIX new products at IBA

 
 

 

German baking oven manufacturer Wiesheu GmbH, launched six new products simultaneously at the recent IBA show in Munich and all of them are available globally.

 

The company introduced a further development of its contact-free loading system which effectively means that all convection ovens in the Euromat series can be operated using the company’s new loading trolley. The trolley has been raised to ensure that the uppermost baking tray can be reached on all models.   

 

 The company claims that the new device ‘enables safe transfer over the gap between oven and loading trolley.’ Because the system allows simple and fast loading, it also saves a lot of energy.   

 

 The company’s STIR technology increases infrared radiation thanks to a special ceramic coating inside the baking chamber of the oven.   

 

 Infrared heat penetrates deeper into the dough than conventional heat transfer technologies, achieving a core temperature of 97 deg C in under 4.5 minutes. Weisheu claims that baking products are finished up to 50 per cent quicker with a significant drop in energy consumption and a much lower baking loss when compared to conventional equipment.   

 

 Wiesheu also launched DIBAS manual convection ovens following calls for a simpler alternative to the current DIBAS machines. The oven doors close mechanically and are pushed into the housing to open and close. Also new under the DIBAS brand is DIBAS Power, a convection oven with a new form of heating tray with between four and 10 tray inserts depending upon the model.   

 

 Quicker oven rise is achieved by the insides of the dough being heated faster, claims the company. A reduction in baking time of between 30 and 40 per cent is achievable when baking bread rolls, says Wiesheu, and it can increase to 50 per cent when defrosting and backing pre-baked dough.   

 

 Also new is the Minimat Compact which is available in manual and electronic control and supplements the existing Minimat range. The Compact, claims the company, ‘offers all of Wiesheu’s know-how in a new design at an outstanding priceperformance ratio’.   

 

 Wiesheu also launched the IS400 control system for its bakeoff ovens. The IS400 belongs to the company’s IS family of control systems which includes IS500 and IS600 which Wiesheu describes as the ‘mother of all our controls’.
